It’s no secret that the best place for Mexican food in Salt Lake City is Red Iguana. It has won almost every Mexican restaurant award by all the local magazines for years and if you’ve ever tried any of their famous moles, you know why. But what you may not know is that their brunch is just as killer as their dinner.
Oh, you didn’t know they had brunch? Well, I’ll let you in on the secret: on the weekends, Red Iguana offers their full menu plus a few breakfast-themed specials–and it is amazing. Last weekend my friends and I visited Red Iguana for Sunday brunch.
I ordered the Huevos Motulenos, with shredded pork topped with mole amarillo (a mole made with raisins, yellow tomatoes, yellow zucchini and yellow chiles), two poached eggs and two strips of bacon surrounded by tortilla triangles. The mole was quite spicy, as the waiter warned, but the subtly sweet flavors of the yellow zucchini and tomatoes were still evident. It was a great combination with the pork and the eggs somehow meshed everything together.
My friend had the Chilaquiles, tortilla chips friend with a mixture of chorizo, eggs, salsa and mole poblano (made with dried chiles, peanuts, walnuts, bananas and chocolate). The chips were crispy and a good texture, and the mole poblano had a good kick of spice with a hint of chocolate. The only downside was that there wasn’t a lot of chorizo and eggs, which would have made it perfect.
Our other friend, who is vegan, struggled to find a meat- and cheese-less option on the menu. She ended up ordering the vegetarian fajitas, a hefty portion of sauteed red, green and yellow peppers with onions along with pico de gallo and guacamole on the side. They arrived hot and sizzling. She reported that they were the most flavorful veggie fajitas she’d ever had. Each vegetable maintained its own flavor, unlike many fajitas that all blend into one taste, and even had a hint of spiciness.
So now you know: Red Iguana is your go-to Mexican restaurant for every meal, day or night!
