Brunch at Bambara in Salt Lake City

Bambara has been one of downtown Salt Lake City’s outstanding dining staples for years now, impressing locals and tourists alike with their New American dishes.  They have long been known as the perfect place for pre-theater dinner or drinks thanks to their location across the street from Capitol Theater, but now that they serve brunch, Bambara‘s fame might start to stem from the earliest meal of the day.

The brunch menu caters to both people staying at the hotel with simple staples like steel cut oats ($8) and bagel and lox ($12) and those out to splurge their day’s caloric intake with heavy-hitters like sourdough French toast (with cinnamon-maple butter and bacon or sausage, $10) and the American Wagyu Burger (with aged Gruyere, mushrooms, truffle aioli and a fried egg, $17).

Healthier items are marked with a dainty heart symbol in an effort to divert your eyes away from the richer dishes, but I couldn’t help ordering the Croque Madame ($11), one of my favorite brunch dishes.  The French version of a ham and cheese sandwich was intensely rich thanks to the Gruyere, not to mention being smothered with Bechamel sauce and a fried egg.  Mustard seeds lined the sandwich, giving it a nice kick.  I would have liked the egg to be runnier, but overall it was delicious.

The Croque Madame was a massive amount of food but the other dishes we ordered were much better portioned.  The Buttermilk Biscuits ($9), our server’s favorite, was served with a spicy Utah elk sausage gravy and breakfast potatoes.  The elk gravy was an interesting variation on the traditional biscuits and gravy, while still keeping the savory (and heaviness) of the original.

And speaking of traditional, the Bambara Benedict ($11), didn’t stray far from the classic dish; it was served with smoked pork and a chervil Hollandaise sauce.  (Cold-smoked salmon is available instead of pork for an additional $2.)  It was deliciously familiar.

I’ve been to Bambara several times for dinner and just for dessert and drinks and never had a bad meal.  Now I can add brunch to that list.  I can’t wait to go back to try the American Wagyu Burger.
